Gluten Free/Dairy Free French Toast for the Picky Toddler
When my son was diagnosed with a gluten & dairy sensitivity, my first thought was "oh sh*t, I'm going to have to get creative with cooking"... & that's when this recipe came in handy! My friend told me she was making French toast for a family brunch she was attending and I decided to also make French toast that day...but gluten & dairy free so my son could enjoy some too!
A simple Gluten Free/Dairy free French Toast recipe:

- 4 slices of gluten free bread (I usually find it in the refrigerated section of my local grocery store)
- 3 large eggs
- 1/2 cup milk (I use Ripple milk, it is dairy free & plant based)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Butter for cooking (I use Country Crock plant butter)
- Maple syrup and toppings of your choice (e.g., fresh berries, powdered sugar)
Instructions:
1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
2. Heat a non-stick skillet or griddle over medium heat and add a pat of butter to coat the surface.
3. Dip each slice of bread into the egg mixture, making sure both sides are well-coated.
4. Place the coated bread slices on the heated skillet and cook until golden brown on both sides, about 2-3 minutes per side.
5. Once cooked, transfer the French toast to a plate and repeat the process with the remaining slices.
6. Serve your French toast warm with maple syrup and your favorite toppings.
