Gluten Free - Dairy Free - Egg Free Broccoli Bites

This recipe stars fresh, broccoli combined with gluten-free flour (or breadcrumbs), creating a satisfyingly crispy exterior. The absence of eggs is compensated by the use of a flaxseed mixture, providing the necessary binding element for a perfect patty every time. Plus, we've ditched dairy without compromising on richness by incorporating flavorful ingredients like cheddar-style dairy free cheese & sheeps milk grated cheese...YUM.

Gluten Free Dairy Free Egg Free Broccoli Patties

Equipment

  • 1 Baeba Babycook or Pot with boiling water
  • 1 Frying Pan
  • 1 Spatula
  • 2 Small Bowls
  • 1 Fork

Ingredients
  

  • 2 Cups Broccoli
  • 2 Slices Daiya Dairy Free Cheese Slices or Daiya Dairy Free Shredded Cheese
  • 1/2 Cup Gluten Free Flour
  • 1/2 Cup Sheeps Milk Grated Cheese
  • 2 tbsp Ground Flax Seeds
  • 6 tbsp Water
  • Olive Oil

Instructions
 

  • Steam (in Beaba Babycook) or boil the chopped broccoli until tender. Drain and let it cool.
  • You can use a food processor or Beaba Babycook to chop the broccoli finer (I tried to put the cheese in the Beaba with the broccoli and it did not mix well, but maybe a food processor would have been better).
  • In a large bowl, combine the cooled broccoli, cheese, grated cheese, flour, flax seed mixture (2 tablespoons ground flax seeds mixed with 6 tablespoons water (as an egg substitute). Mix well until all ingredients are evenly combined.
  • Form the mixture into patties, using about 2 tablespoons of the mixture for each patty & put on separate plate.
  • Heat olive oil in a skillet over medium heat. Cook the patties for 3-4 minutes on each side, or until they are golden brown and crispy.
  • Remove the patties from the skillet and place them on a paper towel to absorb any excess oil.
