This recipe stars fresh, broccoli combined with gluten-free flour (or breadcrumbs), creating a satisfyingly crispy exterior. The absence of eggs is compensated by the use of a flaxseed mixture, providing the necessary binding element for a perfect patty every time. - 1 Baeba Babycook or Pot with boiling water
- 1 Frying Pan
- 1 Spatula
- 2 Small Bowls
- 1 Fork
Ingredients
- 2 Cups Broccoli
- 2 Slices Daiya Dairy Free Cheese Slices or Daiya Dairy Free Shredded Cheese
- 1/2 Cup Gluten Free Flour
- 1/2 Cup Sheeps Milk Grated Cheese
- 2 tbsp Ground Flax Seeds
- 6 tbsp Water
- Olive Oil
Instructions
- Steam (in Beaba Babycook) or boil the chopped broccoli until tender. Drain and let it cool.
- You can use a food processor or Beaba Babycook to chop the broccoli finer (I tried to put the cheese in the Beaba with the broccoli and it did not mix well, but maybe a food processor would have been better).
- In a large bowl, combine the cooled broccoli, cheese, grated cheese, flour, flax seed mixture (2 tablespoons ground flax seeds mixed with 6 tablespoons water (as an egg substitute). Mix well until all ingredients are evenly combined.
- Form the mixture into patties, using about 2 tablespoons of the mixture for each patty & put on separate plate.
- Heat olive oil in a skillet over medium heat. Cook the patties for 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel to absorb any excess oil.
